Souvenirs From South Carolina

He got me some shot glasses, a shark figurine, and a crystal rock. He got the Texas shot glass during their layover in Texas. Akesha got some shells that hubby found at the Myrtle Beach, a horse, and a silly monkey book.
Then he got us some shirts.....:)
And a military coin. Hubby loves to collect military coins.
These are the knick knacks that hubby got for us when he came home from South Carolina. I did not expect him to get us these stuff...well, he knows what I like to get every time we go somewhere....SOUVENIRS! Thanks a lot hon, you are awesome. I love yah!

Wordless Wednesday: Flowers and A Cake

Aside from preparing a welcome sign/balloons for hubby, Akesha and I also bought a cake and flowers for hubby. Once a month hubby buy flowers for me, but this month I have to stepped up and bought flowers for him as part of his homecoming.

Cut Like a Pro

When I was growing up I can barely remember having a long hair. I always have my hair short. For me having a long hair is a pain in a butt. It is hard to maintain a long hair and also hair maintenance here in the US is 4 times expensive compare to the Philippines. I usually go to the hair salon here once in a year, but when I was in the Philippines I go there more often.

I would rather have a short hair like this..:) lol!
Anyhow he has no choice because when he came home from work (a week before he went to South Carolina) I already cut my hair short. Yes, I cut my hair! For the first time in my hair history....lol! I am confident enough to cut it by myself. So here's the evidence. Hubby wants me to go to the hair salon to get my hair trimmed, but I opposed. I am happy to have my short hair back!

Long Choppy Layers

My kind of hair. This is the hairstyle I copied when I cut my own hair. I am glad it turned out as what I expected. I had trouble cutting the back part though, but I have managed to do it by myself.

Glad to Have You Back Hon!

How was your weekend folks? We had a very hectic weekend. Hubby just got back from his annual tour from South Carolina....whew! Finally. Glad to have you back hon! We don't do much this weekend aside from going to church with FIL, and we went grocery shopping. And we spent most of our time at home watching movies. How about you? Eggs Benedict

Have you ever cook an eggs Benedict before? I have heard this before but I am not sure how to make it. So I looked up the recipe on the net, and here's how to make it.

Ingredients

* 1 to 2 teaspoons instant chicken bouillon granules (optional)
* 4 eggs
* 1 recipe Mock Hollandaise Sauce*
* 2 English muffins, split
* 4 slices Canadian-style bacon
* Cracked black pepper (optional)

Directions

1. If desired, lightly grease a 10-inch saute pan or skillet with cooking oil or shortening. Half-fill the skillet with water. If desired, stir in bouillon granules. Bring the water to boiling; reduce heat to simmering (bubbles should begin to break the surface of the water). Break one of the eggs into a small dish or a measuring cup with a handle. Carefully slide egg into the simmering water, holding the lip of the cup as close to the water as possible. Add remaining eggs, one at a time.

2. Simmer eggs, uncovered, for 3 to 5 minutes or until the whites are completely set and the yolks begin to thicken but are not hard. Remove eggs with a slotted spoon and place them in a large pan of warm water to keep them warm. Prepare Mock Hollandaise Sauce.

3. Place muffin halves, cut sides up, on a baking sheet. Broil 3 to 4 inches from the heat about 2 minutes or until toasted. Top muffin halves with Canadian-style bacon. Broil about 1 minute more or until bacon is heated.

4. To serve, top each bacon-topped muffin half with an egg. Spoon Mock Hollandaise Sauce over eggs. If desired, sprinkle with pepper. Makes 4 servings.

Meet Some of My College Buddies: Graduation Ball





Meet some of my college buddies. These photos were taken 5 years ago. This was during our graduation ball. Sorry for the quality folks... digital camera is not in during that time....lol!

These are the people I used to hang out with since I was in first year up to fourth year college. We have become good friends and develop a bond instantly during our first day of school. I also have set of friends from my high school years and that will be posted later.

Fresh Strawberry Bars

How would you like to make Fresh Strawberry Bars? A juicy strawberry topping makes these tender peanut butter cookies a treat to eat. To make the cookies ahead, freeze the bars then top with the berries just before serving.

Ingredients

* 3/4 cup butter, softened
* 3/4 cup peanut butter
* 1 cup packed brown sugar
* 1/2 cup granulated sugar
* 2 tsp. baking powder
* 1/4 tsp. salt
* 2 eggs
* 1 tsp. vanilla
* 2 1/4 cups all-purpose flour
* 1/2 cup strawberry jam
* 4 cups small whole strawberries, halved or quartered

Directions

1. Heat oven to 350 degrees F. Line 13x9x2-inch baking pan with foil, extending foil beyond the edges. Set aside.

2. In large mixing bowl beat butter and peanut butter on medium to high for 30 seconds. Beat in sugars, baking powder, and salt until combined. Add eggs and vanilla; beat until combined. Beat in as much flour as you can with mixer. Stir in remaining flour.

3. Spread dough in prepared pan. Bake 25 minutes or until top is lightly browned and toothpick inserted near center comes out clean.

4. Cool completely on rack. Remove from pan by lifting foil. Spread jam and top with berries. Cut into bars. Serve at once or refrigerate up to 6 hours. Makes 24 bars

Make Ahead: Wrap the peanut butter base in foil; store at room temperature up to 24 hours. Before serving, top with jam and berries. Or freeze the peanut butter base in a freezer container up to 3 months.

What You Need
  • Glass or plastic bottle
  • Thick white crafts glue
  • Embroidery floss in desired colors
What to Do

1. Wash the bottle. Let it dry.

2. Place a dot of glue at the bottom edge of the bottle.

3. Begin wrapping the embroidery floss around the bottle, keeping the wraps close together and applying more dots of glue when needed.

4. To change colors, cut the floss and glue the end in place.

5. Continue making stripes of color like this until the entire bottle is covered with floss. Let the glue dry.

Silent Ranks for the Military Wife

Last month hubby was one of the emcees during his best friend's retirement ceremony in the Air Force, while he was practicing at home he got choked up while reading this poem. This poem is dedicated to all the silent ranks.
The Silent Ranks

I wear no uniforms, no blues or army greens
But I am in the Army in the ranks rarely seen
I have no rank upon my shoulders - salutes I do not give
But the military world is the place where I live

Open-Face Chicken Pesto Burgers

A burger doesn't have to be made from beef to be delicious. Need proof? Check out these mouthwatering burgers made with ground turkey, chicken, pork, and veggies. With its tantalizing combination of mozzarella, tomato, and basil-pesto, this fresh twist on the classic burger is anything but ordinary.

Ingredients

* 1 lb. uncooked ground chicken or ground turkey
* 4 Tbsp. purchased basil pesto
* 1/4 cup finely shredded Parmesan cheese
* 3 cloves garlic, minced
* 1/4 tsp. kosher salt or salt
* 2 3-inch pieces ciabatta bread or four 3/4-inch-thick slices rustic Italian bread
* 2 Tbsp. olive oil
* 4 slices fresh mozzarella cheese
* 2 cups fresh basil leaves, arugula, or spring garden mix
* 8 small tomato slices
* Ground black pepper

Directions

1. In bowl combine ground chicken, half of the pesto, the Parmesan, garlic, and salt. Shape into four 1/2-inch-thick oval patties (to fit bread).

2. Halve ciabatta horizontally. Brush cut side of ciabatta or both sides of Italian bread with olive oil; set aside (reserving any extra oil).

3. For a charcoal grill, place patties on greased rack directly over medium coals. Grill, uncovered, 10 to 13 minutes or until chicken is no longer pink (165 degrees F), turning once halfway through grilling. Top each patty with a mozzarella slice. Cover grill; grill 1 to 2 minutes more or until cheese is melted. Add bread and grill for 1 to 2 minutes per side or until toasted. (For gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover; grill as above.)

4. Arrange greens on toasted bread. Top with chicken patties and tomato slices. Stir any remaining olive oil into remaining pesto and drizzle over all. Sprinkle with coarsely ground black pepper. Makes 4 servings.

Better-Than-Almost-Anything Cake

I love baking since when I was in high school. My teacher taught me how to bake cakes and all other recipes. One of my favorite thing to bake is cake. I've found this simple recipe online, and I thought of sharing this recipe to you.



1 box Betty Crocker® SuperMoist® German chocolate cake mix
Water, vegetable oil and eggs called for on cake mix box
1 can (14 oz) sweetened condensed milk
1 jar (16 to 17 oz) caramel, butterscotch or fudge topping
1 container (8 oz) frozen whipped topping, thawed
1 bag (8 oz) toffee chips or bits


1. Heat oven to 350°F (325°F for dark or nonstick pan). Bake cake as directed on box for 13x9-inch pan.
2. Poke top of warm cake every 1/2 inch with handle of wooden spoon. Drizzle milk evenly over top of cake; let stand until milk has been absorbed into cake. Drizzle with caramel topping. Run knife around sides of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.
3. Spread whipped topping over top of cake. Sprinkle with toffee chips. Store covered in refrigerator.

Photohunt: ROCK (Half Dome)

Another photohunt weekend and it is my time to participate the exciting activity. This weekend's photohunt theme is ROCK. I have quiet a few of rock photos, but the one that I am anxious to share with is the photo of the famous half dome in Yosemite National Park.

I Miss You Hon...Terribly... :(

Being a military wife is one of the hardest role you could imagine. Who would like to be left behind and take charge all the responsibilities at home? Who knows if the President of the US will deploy all the military personnel to IRAQ or send them to a dangerous area somewhere? It will be a devastating experience for me. Greg and I have been married for almost 5 years, and this is the first time we got separated. I am not used not having him around. He's my wind beneath my wings, and without him I can't fly. I know it is hard. This experience is pretty rough for me, and I know I am not the only military wife who feels this way.

Greg has been working in the military for almost 20 years now. I am glad that he is in the Air Force Reserve and not on active duty in the military. Akesha and I miss him terribly. Even though he calls us everyday, but how I wish he's here with us. He is stationed in South Carolina AF Base right now, and will be home after 2 weeks. :( We miss you a lot hon. Take care always, and I love you. We can't wait to see you soon.
